
Hungarian - The Hungarian wax pepper is a medium hot, pastel yellow chile pepper also known as the hot yellow pepper or hot wax pepper. The Hungarian wax is closely related to the mild banana pepper. These peppers appear so much alike they cannot usually be distinguished except by taste. The Hungarian wax pepper tapers to a rounded point and averages about 6” in length and is about 1 1/2” wide.

Cubanelle - The Cubanelle is a variety of sweet pepper. When unripe, it is light yellowish-green in color, but eventually turns bright red. Compared to bell peppers it has a thinner flesh, is longer, and has a slightly more wrinkled appearance.

Poblano - The Poblano is a very mild chile pepper originating in the State of Puebla, Mexico. Dried, it is called ancho chile. One of the most popular peppers grown, the plant is multi-stemmed, and can reach 25 inches in height. The pod itself is about 3-6” long, and about 2-3” wide. An immature Poblano is dark purplish green in color, but eventually turns a red so dark as to be nearly black.

Jalapeno - The Jalapeno is a medium to large size chili pepper which is prized for its warm, burning sensation when eaten. Ripe, the Jalapeno can be 2–3½ inches (5–9 cm) long and is commonly sold when still green.

Habanero - The Habanero chile is one of the most intensely spicy species of chili peppers. Unripe Habaneros are green, and they color as they mature. Common colors are orange and red, but white, brown, and pink are also seen. Typically a ripe Habanero is 1–2.5” long.

Finger Hots (Serrano) The Serranos pepper is a type of chili pepper that originated in the mountainous regions of the Mexican states of Puebla and Hidalgo. Unripe Serranos are green, but the color at maturity varies. Common colors are green, red, brown, orange, or yellow. Serranos are very meaty and thus they do not dry very well. They are generally between 1 and 4 inches long (2.5 to 10 cm) and around ½ inch (1 cm) wide.

Cherry Hots- A very meaty chile pepper that is great to add heat to hot pepper jelly or relish. It can also be stuffed or chopped and used in fresh salsas. In Italy, they are first are pickled in vinegar brine then stuffed with ingredients like provolone and prosciutto ham. After being stuffed, they are marinated with herbs and olive oil.
